After a soft pressing, the skins is therefore sent immediately
to the distillery, distilled through exposure to steam,
and after fining at full strength (78%) in small stainless
steel tanks, the alcohol level is reduced to 50° and the
grappa is bottled.
Color: a brilliant and transparent white.
Odor: extraordinarily intense and penetrating, characteristic.
Flavor: strong and full, warm, dry and unusually persistent.
