The system of rearing with classical “Guyot”, with short pruning.

Descriptive Notes:
 
Pleasant and well-balanced wine to taste, refined, with a great unmistakable scent, brightly coloured.
Wine-making:
 
Long maceration of the grape skins, fermentation temperature 30/32 °C.
Refinement:
 
30% Twelve – Fifteen months in barriques
70% Twelve – Fifteen months in barrels .
Bottling:
 
Late fall
Refinement in bottles:
 
Six months at the Penna’s cellar
The wear at the consumer:
 
The nebbiolo “Vigiotö” is good to age. This wine remains in bottle until 15 years for the good structure.
Conservation:
 
To maintain the bottles horizontally, without light; the temperature: 15°/16° and the humidity 80/85% about.
The temperature of the service:
 
18°/20° C.
Gastronomical coupling:
 
Strong red meat, game and aged cheese.
