Place of origin:   Vineyards of Dolcetto Grapes in Madonna Como (located in the commune of Alba). Southern exposure. Period of vintage: middle or end of September.

Yield pervine:   0,9 Kg approx.
Notes About the cultivation:   Classical "Guyot" method, with short pruning.
Average density of vines:   5.000 vines per hectare.
Descriptive notes:   A prestigious Dolcetto wine obtained from an accurate thinning out and selection of bunches during the grape harvest. A balanced, full-bodied and well-structured deep ruby red coloured wine with a young, fresh, fruity, delicately vinous and velvety scent. A relatively long maceration and a brief permanence in wooden barrels make this wine more pulpous and velvety.
Wine-making:   Medium-long maceration of the grape skins; fermentation temperature: 25/28° C.
Refinement:   80% Six - Eight months in stainless steel tanks,
20% Six - Eight months in in barrels
Bottling:   Late summer
Bottle ageing:   Four months at the Penna Winery.
Consumption:   This wine can be consumed, without any kind of alteration, within 4 years and for certain vintages within 5-7 years.
Preservation:   Maintain the bottles in a horizontal position, in a cool, dark room. Temperature: 15°/16° approx.; Humidity: 80/85% approx.
Serving temperature:   18°/20°C.
Best served with:   Pasta with tasty sauce, meat, poultry, and seasoned cheese.
